Daddy's Favourite Biscuits

When Steve was still in high school he managed to polish off at least 90 to 100 of these little beauties without any trouble. He didn't do it over night - it did take him at least 3 or 4 days!


The story goes............
I was baking for the church fair and freezing the batches of biscuits as I went, starting the weekend before the fair.

Early on the Saturday morning of the fair I pulled out the buckets and ice cream containers of frozen biscuits to find the entire batch of 10 dozen coconut cookies were but crumbs.

It was just too much for him to pass by the freezer and not open the lid and take a handful of frozen cookies - I doubt that he ate one cookie defrosted!!

So for future reference, whenever I baked for the fair I stuck "keep off" signs on the containers.

It worked pretty well, lost a few to natural attrition (that being Steve) but never 10 dozen in one week again!

So every now and then we have a bake up of the cookies and I always tell the girls the story of "The Time Daddy Ate all of Nan's Biscuits for the Church Fair"! This time one of T's responses was, "Sugar's not good for you you know!" Of course I agreed with her, and R's response as she licked her fingers was, "I love it!"

And she loves cracking the eggs!

Then it was roll the dough...
Dip the dough....

Place the rolled dough evenly on the tray and press gently with the fork!!

Ready for the oven!

And last but not least, the thumbs up from greatest food critic of all - the kid!
