HEARD OF THE WONKY DONKEY?

Well this is the cake version! The Wonky Cakey :)
Cleaned the oven and put the side racks back in the wrong holes - giving a leaning tower look to my cakes.

Still getting around to fixing the problem - BUT we are becoming used to the wonky cakes, in fact have one in the oven right now - a five cup cake! If you have never tried the 5 cup cake, it's a good one, especially if you have no butter or eggs - yessiree, a cake without butter and eggs and delicious to boot.
1 cup milk
1 cup SR flour
1 cup coconut
1 cup sugar
1 cup chopped apricots ( or any diced dried fruit combination )
Combine and bake in moderate oven (not too hot) about an hour or until firm to touch. in the middle. Mmmmmm, makes a moist sticky cake that keeps really well.
My mouth is watering waiting for it to come out of the oven!
